Modern People’s Kitchen recipe
Ingredients:
Massa
- 2 cups cooked and peeled pine nuts
- 1 tea cup of oil
- 1 cup whole milk
- 200 ml of coconut milk (1 glass)
- 3 large eggs
- 1/2 cup grated coconut
- 2 heaping tablespoons all-purpose flour 1 1/2 cups sugar
- 1 tablespoon powdered yeast
- 1 pinch of salt
Roof
- 1/4 cup sugar
- 1 teaspoon ground cinnamon 1/4 cup water
- 200g. grated coconut
Preparation mode:
Mix the dry ingredients in a bowl: grated coconut + flour + sugar + yeast + salt.
Beat the milk + oil + eggs in the blender. Add the pine nuts little by little until it turns into a cream. Throw the pine nut cream into the dry bowl and mix until all the ingredients are incorporated.
Bake in a greased and floured mold in a preheated oven at 180ºC for approximately 1 hour, or until the top is golden. Do the toothpick test to make sure it’s baked inside (pierce the cake, if the toothpick comes out dry, the cake has already baked). Let cool.
Roof
Put the sugar in a pan and let it heat until it becomes a golden caramel. Add the water and cinnamon and lower the heat. Leave until the caramel dissolves and turns into a golden syrup. Add the grated coconut. Throw the hydrated coconut in the syrup over the cake.
