Ingredients:
2 cups (tea) granulated sugar
1 cup of water (tea)
1 tablespoon apple cider vinegar
2 cups fresh coconut (coarsely grated)
1 tablespoon unsalted butter
Preparation mode:
In a large saucepan, combine the sugar, water and apple cider vinegar. Put the pan over medium heat and boil until you get a medium-thread syrup (about 10 minutes).
Add the grated coconut and butter to the syrup and continue cooking over medium heat, stirring constantly, until the mixture starts to come away from the bottom of the pan and acquires a caramelized color. Turn off the heat and wait for the mixture to cool slightly, until it is warm but still moldable.
On a clean and greased surface, take portions of the mixture and shape it into small rounded portions. Transfer it onto parchment paper and let it cool completely. Serve next.
