The Capital of Santa Catarina celebrates its 350th anniversary on March 23rd, and to celebrate this historic moment, the DANKO restaurant will present during the month a dish developed especially for the date. Dazumbanho Floripa, created by chef Igor Krupp, mixes flavors and cultural traditions.
“Our menu has everything to do with Florianópolis, we present fresh and quality products, and mainly from producers in the region. And as the date approached, we decided to propose that the chef, who is not a manezinho, create a special dish to celebrate Floripa’s 350th anniversary. And we were happy with the result”, highlight Carlos Lopes and Eduardo Vicari, partners of the restaurant opened in October 2022.

Chef Igor says that it was during field research and listening to stories, mainly from women, that he decided to re-read an old and even slightly forgotten recipe, Estopa de Peixe.
“Estopa is nothing more than a dish made from fresh fish with seasonings and commonly served as a stew. At Dazumbanho Floripa, I decided to seal it in the frying pan and serve as the basis for assembling the plate, where it appears as a representation of Florianópolis”, she says.
Igor explains that in addition to Estopa de Peixe, the dish also has a Carrot Soufflé, which alludes to sand dunes, such as those at Joaquina beach, Eggplants marinated with spices and dark beer from a brewery in the city, which come in as a representation of the stone cliffs and a caipirinha foam, made with cachaça produced in the Ribeirão da Ilha and that bring the lightness of the waves breaking on the beach.
“The idea was to bring the great diversity that the Island offers and bring together flavors, culture, stories and natural beauties on the plate. Florianópolis received the title of Creative City of Gastronomy, by Unesco, and I am sure that Floripa ‘Gives you a bath’”, adds the chef who has lived in the city since 2019.
Dazumbanho Floripa will be available on the DANKO menu from March 9 to 31, 2023. The restaurant, located on Passeio Primavera, on the banks of SC-401, in the Capital, opens from Tuesday to Saturday, from 11:30 am to 11 pm and Sundays from 11:30 am to 6:00 pm.
