Ingredients:
- 2 (cups) cooked rice tea (about 250g)
- 2 eggs
- 2 tablespoons breadcrumbs (20g)
- 3 tablespoons of grated cheese (30g)
- 2 tablespoons of chopped parsley (10g)
- ½ tsp baking powder (5g)
- 1 can of Sardines with Gomes da Costa Oil (125g)
- Salt and black pepper to taste
Preparation mode:
Mash half of the cooked rice with the sardine oil with a fork. Add the cooked rice, eggs, breadcrumbs, grated cheese, parsley and yeast. Mix well until you get a homogeneous mixture. Add the sardines and mix the dough. Season with salt and pepper.
With the help of 2 spoons, shape the dumplings and fry them in abundant hot oil until golden. Remove from oil, drain on absorbent paper. Serve it hot.
CHEF’S SAY
Do not put too many dumplings at the same time to fry. As the oil temperature drops, dumplings can get soggy.
VARIATION
If you prefer croquettes, beat the rice in a blender and grind the balls into a cylindrical shape.
