Ingredients:
Massa
1.8 liters of water
700 g wheat flour
350g potato starch
28 g of tempering soon
Natural spices to taste (onion, garlic, pepper)
0.3g of salt
18 g of bacon broth
0.3 g bacon essence
Filling
100 g de bacon
360 g of cottage cheese
to bread
1 kg bread flour
Preparation mode:
Massa
1st Step: Put the water to boil (200º) and add the spices. Let simmer until bubbly – approximately 6 minutes. Lower the fire then to a temperature of 180º. Once this is done, add the potato starch and stir until completely dissolved. Add the flour and keep stirring until it comes out of the pan, for about 4 minutes.
2nd Step: With the dough still hot, pour it over the table and “open” it a little to cool. Once it is at a temperature that you can handle, knead the dough and let it cool.
Filling
1st Step: Remove the skin from the bacon, grind it and fry it at 200º. Tip: the bacon should be placed in the pan while it is still cold. After fried, place on paper towel to remove excess fat.
2nd Step: In a container, weigh 100g of the fried bacon and add the curd. Mix well.
Role models
Take a portion of the dough, spread it over your hand and add 1 teaspoon of the filling. Close the dough and shape until you get the desired shape. Then roll in breadcrumbs and fry.
Frying time: 1 and a half minutes, approximately – small portions in the pan
Air fryer: 7 minutes – temperature 200º
