Ingredients:
2 cups (300 g) of Vitória Mimo Selection grapes;
200g of your favorite cream cheese, such as cottage cheese, cream cheese or ricotta cream;
1/2 cup unsalted butter at room temperature;
1 cup of sugar;
2 eggs at room temperature;
2 cups of wheat flour;
1 teaspoon of chemical yeast;
1 teaspoon of salt;
1 cup skimmed milk;
Icing sugar to decorate.
Preparation mode:
Beat the butter with the sugar until you get a clear, even crumbly mixture;
With the mixer on low speed, add the eggs, one at a time;
Sift the wheat flour, salt and baking powder until fine.
Gradually add to the mixer, alternating with the cup of milk, mixing at low speed until the dough is homogeneous. But don’t hit too hard.
With a spatula, mix the cream cheese into the dough. Gently add the Mimo Vitória grapes, just so that they are distributed in the cake batter.
Take the cake to the preheated oven, at 180º, for one hour, in a greased shape with flour and butter. The ideal shape is that of a pudding, with a hole in the middle and 20 cm in diameter, which distributes heat well.
But this cake will also work well if it is baked on a tray and then cut into squares.
Unmold only when it cools down and sprinkle with icing sugar (or sifted caster sugar).
