Delight that came by chance
Curiously, at the same time that queues are hectic in New York to try the cream-filled round croissant, here, a new version of the croissant appears, which has been a bestseller morning, afternoon and night. “It all started when I decided to cut the croissant the way you cut a French roll, spread some butter that in itself is incomparable, add a touch of honey and torch the open croissant in an attempt to have a quick and tasty snack. When I tasted it, immediately after the first bite, I realized that I was looking at an order that matched any moment of the day”, says Bruna Vieira.
No sooner said than done! More and more people wanted to try this delicacy that originally appeared in Vienna, the capital of Austria, in the mid-17th century, later, in France, it became a symbol of the country’s gastronomy and in a Brazilian way continues the history of renewal of the classic.
In addition to being crispy on the outside and airy on the inside, this light dough has at the same time been filled in many ways by Café Du Centre. “Since 2014, we’ve experimented with new ways of savoring the croissant, but between the sweet and savory offerings, there was a lack of a mild version of both. We bet on mixing the buttery flavor with a precise amount of the best honey, it was surprising”, guarantees the creator, who has already had many inventions copied by the best known coffee shop chains in Brazil when she launched other novelties.
“We nicknamed the French Toast Croissant ‘the new French bread on the plate’, because of its sales success, it promises to be the newest darling for those who can’t do without a tasty company for a good coffee”, jokes Bruna.
Innovation reflects yet another trend in a market that continues to rise. Only in the first five months of this year, the bakery sector in Brazil surpassed the billing of all of last year. In 2021, it was R$ 105 billion and this year the accumulated amount until May already exceeded R$ 109.86 billion, according to the Institute for the Development of Food Companies.
“The so-called luxury bakery was consolidated with specializations in artisanal breads, natural fermentations and experiments in pâtisserie. The croissant, star among breads of all kinds, has never been so popular with redesigns that live up to its name”, concludes the businesswoman.
Croissant comes from the French word crescent. And if until then the name was justified by the shape of a crescent moon, after the search for the French Toast Croissant – which only grows – it undoubtedly gained new delicious reasons to be called that.
