Ingredients:
- 2 kg of mocotó
- Water until covered
- 500 grams of desalted dried meat
- 500 grams of calabrese sausage, cubed
- 150 grams of chopped onion
- 10 grams of chopped garlic
- 50 grams of sliced leeks
- 2 units of bay leaf
- 150 grams of tomato
- 150 grams of cooked broad beans
- 15 grams of crushed garlic
- 1 grams of paprika
- 10 grams of parsley
- 10 grams of chives
- Salt to taste
- Pepper sauce to taste
Preparation mode:
In a pressure cooker, place the mocotó, seasonings, dried meat and water. Once well cooked, separate the mocotó pieces, remove the marrow and set aside. Then strain the broth, set aside, separate the dried meat and shred the dried meat. In another pan, add the chopped sausage and sauté. Once golden, add the garlic, paprika, dried meat, fava beans, strained broth and pieces of mocotó. Then let it boil. Adjust the salt and add the parsley and chives. Serve with pepper if you prefer.
