Ingredients:
– 2 tablespoons of Nova Oliva Olive Oil
– 1 tablespoon of butter
– 1 diced seedless tomato
– Salt and oregano to taste
– 1 cup (tea) of cooked Tio João Cozinha Fácil Rice with Fine Herbs
– 3 eggs
– Grated cheese to taste
– 1 tablespoon of parsley or chives
Preparation mode:
In a frying pan, add the olive oil, butter, tomato cubes, salt and oregano and stir well. Then add the cooked rice, mix and, using a spoon, add it well to the pan. Break the eggs into a container, add the grated cheese, a pinch of salt and beat well with a whisk. Lower the heat and pour in the beaten egg, covering all the rice. Cover and let it cook. When cooked, flip the omelet using a spatula. Let it brown well. Turn it over onto a plate, cut it into slices and serve hot, finishing with parsley or chives. Another option is to make the omelet separately and fill it with rice and tomatoes.
