Ingredients:
1 large bunch of spinach (500g)
1 cup of warmed milk
500 g of Adria Screw Pasta with Eggs
2 tablespoons of olive oil
1 large chopped onion
2 cloves of garlic, chopped
400g turkey breast cut into small cubes
3 tomatoes cut into small cubes
250g of cottage cheese (Catupiry)
200g UHT cream
fresh chopped parsley to taste
salt to taste
grated parmesan to taste to serve
Preparation mode:
Clean the spinach and separate the leaves from the stem. Cook both for 1 minute in boiling salted water. Drain. Blend the spinach stalks with milk in a blender until smooth. Reserve. Cook the pasta in plenty of salted water until al dente, about 5 minutes. Meanwhile, fry the onion and garlic in olive oil until they start to lightly brown. Add the turkey breast and sauté for 2 minutes.
Add the spinach leaves and tomato and sauté for another 1 minute. Then add the milk with beaten spinach, cottage cheese and cream. Mix well, sprinkle with parsley, adjust the salt and coat the cooked pasta in the sauce. Mix well and serve with grated Parmesan cheese.
