Ingredients:
● Gallo Extra Virgin Olive Oil Reserve to taste
● 3 tablespoons Gallo Sliced Green Olives
● 700g turkey breast
● 1 teaspoon garlic powder
● Salt, to taste
● Ground black pepper, to taste
● 2 oranges
● Thyme, to taste
● 100g diced bacon
● 2 cloves of minced garlic
● 1 cornbread crumb
● Coriander, to taste
● 12 slices of bacon
Preparation mode:
Season the turkey a day in advance with salt, ground black pepper, garlic powder, the juice of two oranges and the zest of their peel. Drizzle with olive oil and sprinkle with thyme. Refrigerate overnight.
The next day, start sautéing the bacon in a frying pan until golden. Add the chopped garlic and cook for 2 minutes.
Add the cornbread crumbs and mix all the ingredients well. Add the chopped coriander and olives. Season with salt, black pepper and olive oil to taste.
Open the turkey breast in half and stuff it with the cornbread mixture. Wrap with string. Cover the turkey breast with the bacon slices.
Place the turkey breast in a pan, drizzle with olive oil and cook in the preheated oven at 190ºC, for around 45 minutes, sprinkling with water whenever necessary. Serve with a watercress salad with orange segments and finish with olive oil to add an even more special flavor.
