Cottage cheese is rich in protein, low in calories and low in fat, in addition to being fresh and mild in taste, contributing to a balanced and healthier diet. Check out this easy recipe that makes a great light snack option.
Ingredients:
For the filling:
– ½ cup (tea) of quinoa (70g)
– 1 teaspoon (3 ml) olive oil
– 1 bunch of coarsely chopped spinach (240g)
– 1 chopped onion (80g)
– 3 minced garlic cloves (10g)
– 1 package of Tirolez Cottage Cheese (200g)
– Salt and nutmeg
For mass:
– 8 slices of wholemeal bread (200g)
– 4 tablespoons of olive oil (52ml)
Preparation mode:
– Put 1 cup (tea) of water in a pan with a pinch of salt.
– When it boils, pour the quinoa, cover the pan and let it cook for 15 minutes or until the water has dried and the quinoa is cooked and soft, but still with texture. Reserve.
– Heat the oil in a skillet over medium heat and sauté the spinach with the onion and garlic.
– When the spinach turns dark green, transfer it to another container and let it cool.
– Mix the quinoa, the braised spinach and the cottage cheese.
– Season with salt and nutmeg, and set aside.
– Flatten the bread slices with a rolling pin.
– Brush olive oil on 8 porcelain pots suitable for ovens with a diameter of 9 cm and accommodate the slices of bread, making small baskets.
– Brush olive oil on the surface of the bread.
– Bake in a medium oven (180°C), preheated, for 15 minutes or until the bread is golden and crispy.
– Unmould the bread baskets and place the spinach, cottage cheese and quinoa filling on them.
