Ingredients:
- 1 kg of lizard
- 1 large chopped onion
- ½ cup Castelo Traditional Balsamic Vinegar
- ½ cup chopped peeled tomato
- 1 teaspoon of salt
- 1 tablespoon fresh thyme
- 1 tablespoon of Castelo Olive Oil
- ½ cup of water
- 2 tablespoons of Castelo Green Olives
- 2 tablespoons of Biquinho Castelo Pepper
Preparation mode:
Place the onion, balsamic vinegar, chopped peeled tomato, salt and fresh thyme in a bowl. Soak the meat in the seasonings for 1 hour. Remove the meat from the seasonings. Heat a pressure cooker, add the olive oil, add the meat and let it brown on all sides. Add the marinade and water, close and when it reaches pressure, leave for 60 minutes. Let the pressure release, remove the meat and wait for it to cool. Add to the pan, the olive, the biquinho pepper and let it boil until it thickens. Slice the meat and serve with the sauce.
