Ingredients:
800g ice cream
2 packs of Strawberry Flavor Piraquê Wafer Biscuits
100g chestnut sherry
2 cups sparkling water
2 cups unbleached wheat flour
16 slices of crustless bread
1.5 liters of oil
200g whipped cream
32 strawberries
Preparation mode:
Make ice cream balls weighing approximately 100g each. Wrap in cling film and place in the freezer for 2 hours. Roll the dough over the slices of bread to make them thin. Remove the frozen ice cream scoops. Remove them from the cling film and wrap the ice cream in the slice of bread. Place cling film and place in the freezer for another 2 hours.
Process the wafer until it turns into crumbs. Mix the farofa with the chestnut sherry and set aside. Mix the wheat flour with the sparkling water until it forms a dough. Take a scoop of ice cream from the freezer and remove the cling film.
Wrap the ice cream ball in the dough. Then, coat it in wafer breadcrumbs and coat with cling film. Place in the freezer for another 2 hours. Repeat the process with all the balls. In very hot oil, fry the breaded ice cream until golden. Serve then with strawberries and whipped cream.
