Ingredients:
250g of Barilla Durum Wheat Fusilli
200g cooked white beans
½ small carrot
½ red onion
½ bunch of broccoli
100g cherry tomatoes
100g canned palm hearts
40ml extra virgin olive oil
Lemon juice to taste
Salt and black pepper to taste
Chopped fresh parsley
Preparation mode:
Start by cutting the onion into thin half moons. Grate the carrot on a medium/coarse grate. Cut the tomatoes in half and the heart of palm into medium slices. Separate the broccoli into medium florets and cook in the pasta water for 5 minutes. After this time, cool in cold water. Cook the pasta in plenty of boiling, salted water for the time indicated on the package. Drain well.
Pour the dough into a separate bowl and add the olive oil. Add the onion, carrot, hearts of palm, broccoli and tomatoes. Mix well. Season with salt and lemon juice to taste. Finish with chopped fresh parsley.
