Ingredients:
- 4 packages of Vitarella Wholemeal Toast
- 300 g of olive oil
- 25 g of garlic
- 280 g diced yellow peppers
- 230 g diced green peppers
- 230 g diced red peppers
- 350 g diced eggplant
- 410 g diced zucchini
- 130 g raisins
- 5 g of oregano
- 200 g grated parmesan cheese
- Salt to taste
- Black pepper to taste
Preparation mode:
Place the eggplant with 1 level spoon of salt to rest for 30 minutes. Afterwards, wash under running water and drain.
Place all the ingredients on a baking tray and place in a preheated oven at 180ºC covered with aluminum foil for 30 minutes. Serve with toast and grated Parmesan cheese.
