Ingredients:
100 grams of Mococa Grated Cheese
Olive oil to taste
Salt to taste
1/2 piece of onion
50 grams of bacon
3 tablespoons cream cheese
Ground black pepper to taste
4 units of medium potatoes
Preparation mode:
Cook the unpeeled potatoes without letting them soften (8 minutes of boiling water is enough).
Let cool, peel and place the potatoes in the freezer for at least an hour.
Finely chop the onion. Grate the potatoes coarsely, gently mix in the onion and set aside. Cut the bacon into very thin small slices.
In a frying pan, over low heat, fry the bacon in olive oil and reserve the bacon, leaving the fat in the pan. Place half the grated potato in the pan, making a circle no more than 20 cm in diameter. Season with black pepper and salt to taste. Place the reserved bacon, cottage cheese and parmesan (reserve a tablespoon of parmesan) over the potato, leaving a border of about 2 centimeters without filling.
Cover with the rest of the potato and season the top again with black pepper and salt. Always on low heat, cover the pan and, after 5 minutes, carefully turn it over (if necessary, use another pan).
Sprinkle the reserved grated cheese over the potato once it has been turned. Cover the frying pan.
After 5 minutes, turn off the heat, add the chopped parsley and serve.
