Ingredients:
Cupcake
1 clara
half a cup of chopped pumpkin (75 g)
3 tablespoons of olive oil
5 tablespoons of demerara sugar
5 tablespoons of NINHO® Instant Milk Powder
half a cup of water
half cup (tea) of wheat flour
5 tablespoons of NESTLÉ® Fine Oat Flakes
1 pinch of salt
1 teaspoon of baking powder
half a teaspoon of vanilla essence
Assembly
1 tablespoon of NINHO® Instant Milk Powder (11.5 g)
1 tablespoon of orange juice
1 cup chopped fruit (mango, kiwi and strawberry)
Preparation mode:
Cupcake
In a blender, beat the egg white, pumpkin, olive oil, demerara sugar, powdered milk and water. Transfer to a container and, little by little, add the wheat flour, oats and mix. Add the salt, baking powder and vanilla essence, mixing well.
Place the dough in cupcake molds, filling them halfway and place in a preheated medium-high oven (200°C) for around 30 minutes.
Assembly
In a container, mix the powdered milk with the orange juice (or the same amount of water if you prefer) until you obtain a homogeneous mixture. Spread over the cupcakes and decorate with a small portion of fruit. Serve next.
